Be ready for any weeknight meal with this yummy slow cooker beef stroganoff in your freezer. Or make it tonight to let it simmer all day tomorrow for a no-fuss weeknight meal.
Being a country girl, I’m partial to a good meat dish. Add in the mushrooms, cream cheese, and sour cream and I’m in heaven. You can serve this yummy beef dish over noodles or mashed potatoes. (Sometimes both.)
Slow Cooker Love
Without a doubt, having meals that can cook in the slow cooker all day is my favorite. When summer rolls around, why heat up an already hot kitchen. Have some go-to slow cooker meals ready to go! You can have a home cooked meal ready to put on the table without slaving over a hot stove. The only heat you are going to need with this recipe is some boiling water. That’s nothing compared to dealing with a hot oven.
Growing up in a Germanic family, I never really thought about where stroganoff originated. I guess I assumed it was German based on my heritage. After looking it up, I found that it’s actually a Russian dish dating back to around 1871, with the first mention of it in a Russian cookbook. So I assumed wrong. But it doesn’t change the fact that it is one of my favorite go-to recipes. It’s just so filling and yummy. Who doesn’t love beef in a rich cream sauce??
Crockpot Beef Stroganoff
Crockpot Beef Stroganoff
- 2 pounds beef cubed (any lean cut is good)
- 1 cup chopped onion
- 2 cans 10 3/4 oz. cream of mushroom soup
- 1 cup sliced white mushrooms
- 1/4 tsp. pepper
- 1 8 oz. package cream cheese
- 1 8 oz. container sour cream
- 6 cups hot noodles or mashed potatoes
In a large (3.5 to 4.5 quart) slow cooker, stir together beef, onion, soup, mushrooms and pepper.
Cover and cook on LOW 8-10 hours.
Stir in cream cheese until melted.
Stir in sour cream.
Serve over noodles or potatoes.
To Prep for Freezer:
Place beef, onions, soup, mushrooms, and pepper in a large freezer bag. Press out as much air as possible. Seal.
Label and date. Lay flat to freeze. Make sure that you have cream cheese, sour cream, and noodles on hand when placing in slow cooker.
To Cook from Freezer:
Thaw overnight. Dump into your slow cooker. Cook as directed above.
