Have these amazingly delicious Crockpot Chicken Fajitas ready in the freezer for a wonderful home cooked meal without the fuss.
I absolutely adore fajitas. Every time we go out to a Mexican restaurant for dinner, I always say that I’m going to try something new. I really never do. I end up with fajitas. Every. Time.
Making them at home can be a little more labor intensive than I would like on a busy weekday. It’s just so much chopping and slicing and marinating. Who has time for that after a long day’s work?
Ready to Go
I like making up a few batches of these at a time to stick into the freezer. I then make sure that I inventory them so that I can put them into our meal plan in the upcoming weeks. It’s just so nice to have something to pop out of the freezer and into the crockpot on a day that I know I’m going to be super busy.
And, even though it’s frozen, it’s still homemade. I don’t have to resort to purchasing any frozen processed meals from the grocery.

Crockpot Chicken Fajitas
Slow Cooker Chicken Fajitas
- 2 pounds boneless skinless chicken breast
- 1 onion sliced thinly
- 3 large peppers I used 2 green and one red, cut into strips
- 3/4 cup chunky salsa
- 2 packages fajita seasoning mix
- 1/4 teaspoon cayenne pepper
- 16 10-inch flour tortillas
- fajita toppings – shredded cheese chopped tomatoes, sour cream, guacamole
Put chicken in slow cooker.
Add onion and peppers.
In a bowl, mix salsa, fajita seasoning mix, and cayenne pepper. Pour over chicken.
Put the lid on slow cooker and cook on low 6-7 hours or high 3-4 hours.
Shred chicken with a fork.
Serve over tortillas and add toppings, then save leftovers for chicken nachos or taco salad. Enjoy!
Top these wonderful fajitas with fresh shredded lettuce, sour cream, guacamole, or whatever your heart desires. I love adding some freshly sliced avocado to them too.
