With the holiday season here, we have more turkey than people. Try using your leftovers in this Leftover Turkey Fried Rice.
I love cooking for the holidays. We had a big dinner here this year for all of our close family members. And, as is typical, I cooked way more food than was necessary.
The turkey turned out amazing, but there was a ton leftover.
I always keep the carcass for stock and/or broth. (I’m writing another post on how I do that and will link it here soon.)
But as far as the turkey, we had to come up with a way to use it all up too. Otherwise, I would just shred it all up and freeze it for later.
We love fried rice. My Redneck even has an electric wok because he loves making fried rice and stir-fry so much. (He had this before I moved in. LOL) He actually gets kind of annoyed that I don’t let him cook more often. We both love to cook, and I won’t say that I’m better at it than him, but I just have taken over the reins. I do however let him share in making these types of dishes, just to make sure that he gets a little time in the kitchen.
I don’t want him to forget how, you know!
We also love this dish because it really is inexpensive to make. Rice is cheap, the turkey we already have, and I typically always have a bag or two of frozen vegetables around to throw in. I altered the typical sauce to use hoisin. I just recently discovered hoisin and feel in love with the flavor. And a little goes a long way. I don’t like waste anything, so I’ve been using the bottle we have in more things to both use it up and to learn more recipes to incorporate the flavor I love so much.
Leftover Turkey Fried Rice
Leftover Turkey Fried Rice
- 1 cup rice
- 1 cup water or broth
- 1 cup shredded turkey
- 1 cup mixed frozen vegetables your choice of mix
- ½ cup soy sauce
- 1 Tbsp hoisin sauce
- 1 tsp ground ginger
- 3 eggs
Cook rice as directed. (We use our Instant Pot for this.)
In a small bowl, whisk together soy sauce, hoisin sauce, and ginger. Set aside.
In a large skillet or wok, heat turkey through. Add in frozen vegetables, heating until thawed but still crisp.
Add in soy mixture. Cook, stirring constantly, about 1 minute.
Add cooked rice to skillet, stirring well.
In a small skillet, (or move rice to one side of skillet and use the empty space) scramble eggs well.
Add eggs to rice mixture. Mix in well.
Serve warm with additional soy sauce, scallions, or other desired toppings.
Using leftovers is one way to drastically lower your food budget. Especially when you know you are going to have extra.
